is racist, consciously or unconsciously, period. If you think you can “refine” something which has been refined by its creators over the course of centuries, or if you think you can “elevate” something which has been perfected to its highest form by our own fully elevated and realized culinary cultures, it can only be because you think whiteness is more refined and elevated than non-whiteness. The reality is, you can’t refine or elevate something which you haven’t even begun to grasp in the first place. If you deconstruct it, lay it out in little piles alongside drizzles and droplets of sauces and purees, top it with foam and local seasonal edible wildflowers, you haven’t refined or elevated a dish, you’ve fucking destroyed it.
